In Java Edition a zombified zombie villager does not despawn if the player has traded with it at least once prior to its death, but unlike all other persistent mobs it still counts toward the hostile mob cap. If the zombie villager picks up any item however, it remains persistent but is excluded from the mob cap.
Witches that have been converted from villagers still count toward mob cap and also don’t despawn, but because zombie villagers remember their trades they don’t count toward mob cap. i dont remember clearly what i typed, but i named the wandering trader, give it a nametag, and then use a command block nearby to constantly set its DespawnDelay to 500, so that it will never reach 0 and despawn.
